Father's Day 2010 & Broccoli Salad

Father's Day has come and gone again for another year. I was up early trying to make the day a little special. Jessica was up early with me and was a big help. She cut and hung Daddy's special sign on the wall and set the table. We had a yummy breakfast of bacon, eggs, hash browns and muffins. The kids were super excited to give Jeff the cards they had made for him at school and Georgia was so excited about the camera backpack we got him that she shouted it out as he was opening it. It was too funny!!! We went to church and then headed up to Jeff's parents for dinner. I was going to make a nice supper for Jeff but Peter and Angie had come to town so it was some time for the cousins to play together. The kids had a blast together as they always do and Uncle Phillip rolled, wrestled and spun them all night. I'm sure he was tired when he went home. We came home and enjoyed a little racing and raspberry trifle.....I might have enjoyed the race a little more then Jeff as my #48 car won. An almost perfect day.......

Last but not least.......my broccoli salad. I was discussing this on facebook the other week so I thought it would be easiest to post here for everyone to see. This is one of my favorite salads. I really thought Sarah was going to eat the whole bowl tonight. I got this recipe when I was in cooking school from Carol. She worked in the cafeteria and was awesome!!! Try it......you'll love it!!!

Broccoli Salad

1/2 pkg bacon, cooked until crispy, broken into small pieces
1 head broccoli, cut into small pieces
3 green onions, chopped
1/2 cup raisins
1/2 cup shredded cheddar cheese

Sauce

1/4 cup white sugar
2 Tbsp vinegar
1/2 cup mayonnaise

All the above measurements are a best guesstimate. I usually double everything and make a huge batch as it won't last long. Prep all your ingredients and mix together in a bowl. Whisk together the sauce ingredients and mix in salad. Best if you chill for a couple of hours. Enjoy!!

Phil was pretty beat by the time he came home, as were the kids. They loved their cousin playtime! How I adore broccoli salad, so yummy!

Kathy, I'm going to make this for our bbq next weekend...just going to do craisins instead of raisins....and add some toasted almonds. YUM, thanks for the recipe!
